Thai Beef

This is great served over brown rice with some steamed veggies on the side.

Thai Beef

2 lbs. beef stew meat cubes
1/2 c. creamy natural style penaut butter
2 Tbsp. lime juice
2 Tbsp. honey
4 Tbsp. soy sauce
1 tsp. ground ginger
1 tsp. dried minced garlic
2 tsp. rice wine vinegar

Add all ingredients to crock pot and cook on low 6 hours. Stir well before serving.

Crockpot Chicken and Stuffing

Easy and delicious!

Crockpot Chicken and Stuffing

4 boneless, skinless chicken breasts
1 pkg. stovetop stuffing
1 can cream of chicken soup
1 2/3 c. hot water
1/3 c. milk

Place chicken in crock pot, combine soup and milk and pour over chicken. Combine stuffing with water. Put on top of chicken. Cook 6 - 7 hours on low.

Carne Con Papas

Literally translated it means "Meat with Potatoes". Delicious served with homemade tortillas, salsa and pinto beans.

Carne Con Papas

1 (3 - 5 lb.) beef roast
1 (15 oz. can) diced tomatoes
1 small can diced green chilis, drained
6 potatoes, peeled and diced
seasonings to taste: Adobo seasoning, minced garlic, minced onion

Place potatoes in crock pot. Place meat on top of potatoes, season with seasonings to taste. Top with chilis and tomatoes. Cook 6 - 8 hours on low or 4 - 5 hours on high.

Doughnut Pudding

Crock Pot Doughnut Pudding

15 doughnut holes, cut in half
1 c. milk
2 eggs
2 Tbsp. sugar
1/4 butter or margarine, melted
1/2 tsp. vanilla
dash nutmeg

Put the doughnuts into a heat safe bowl (such as pyrex) and place the bowl in the crock pot. In a mixing bowl, combine remaining ingredients and mix well. Pour over doughnuts. Cover crock pot and crock pot and cook on low for 3 - 4 hours.

Crock Pot Baked Potato Soup

Rich, creamy and satisfying.

Crock Pot Baked Potato Soup

6 med. potatoes, diced
3 carrots, sliced
3 stalks celery, chopped
1/2 lb. bacon, cooked and crumbled
6 scallions, diced
6 c. water
4 chicken bouillon cubes
Parsley flakes
1 small can (5.8oz) evaporated milk
1 c. shredded chededar cheese

Put everything into the crockpot except cheese and milk. One hour before being done, add cheese and evaporated milk.

Fix It And Forget It Lightly by Phyllis Pellman Good is one of my absolute favorite crock pot cookbooks. It is loaded with simple recipes that are not only tasty but good for you as well. It is categorized into sections such as "Chicken Main Dishes", "Beef Main Dishes", "Vegetables", and "Desserts". This cookbook is great because it tells you the ideal size cooker for each recipe as well as offering tips and hints throughout the book. A must have for any crock pot enthusiast.

Product Review: McCormick Slow Cookers Hearty Beef Stew


I usually make my beef stew in the crock pot like this, but tonight we tried the McCormick Slow Cookers Hearty Beef Stew. Although this product was very flavorful, I found it much too spicy for my kids. It actually reminded me of Peppered Beef Jerkey. If you like it spicy give it a try, but if you are feeding your whole family you might want to pass this one up.

Crock Pot London Broil

Savory, tender and oh so good!

Crock Pot Lodon Broil

1 London Broil
1 can of diced tomatoes with bell peppers
1 pack of Lipton Onion Soup Mix
4-6 large potatoes cut in quarters
1 16 oz bag of baby carrots
1 onion, sliced
1-1 1/2 cups water
1/4 cup worchester sauce

Pour water, worchester sauce and onion soup mix in crock pot. Place potatoes, carrots and onions in crockpot, place meat on top then pour the can of tomatoes on top. Cook on Low for 8 - 10 hours.

Crock Pot Breakfast

Breakfast ready and waiting in the morning!

Crockpot Breakfast

12 eggs
1 (32 ounce) bag frozen hash brown potatoes
1 lb bacon, cut into small pieces -cooked and drained
1/2 cup onions, diced
3/4 lb shredded cheddar cheese
1 cup milk
1/2 teaspoon dry mustard
salt and pepper

Layer the ingredients in your crockpot in this order:
1/2 of the potatoes- on the bottom. 1/2 of the bacon. 1/2 of the onions. 1/2 of the cheese. potatoes. bacon. onions. cheese. Beat the eggs, milk, mustard, salt and pepper together. Pour this over the whole mixture. Cook on low overnight.

Crock Pot BBQ Ribs

Crock Pot BBQ Ribs


3 lbs. pork ribs
Seasoned salt and pepper
1 onion, sliced
1 (16 oz.) bottle barbeque sauce

Sprinkle ribs with salt and pepper. Place ribs in broiler pan under broiler for 15 minutes to brown and remove excess fat. Put sliced onion in crock pot. Slice ribs into serving pieces and put in crock pot. Pour in barbeque sauce. Cover and cook on low 8-10 hours or on high 4-5 hours.

Crockpot Almond Chicken

Flavorful and delicious!

Crockpot Almond Chicken


1 can (14 ozs) chicken broth
1 slice bacon, diced
2 tablespoons butter
3/4 - 1 pound boned chicken breasts, cut into 1-inch pieces
1 1/2 cups diagonally sliced celery
1 small onion, sliced
1 can (4 ozs) sliced mushrooms, drained
2 tablespoons soy sauce
1/2 teaspoon salt
cooked rice
2/3 cup slivered almonds, toasted

Pour chicken broth into crockpot. Cover and turn crockpot to High while browning meats and vegetables.

In skillet, heat bacon and butter; add chicken pieces and brown quickly on all sides. With slotted spoon, remove browned chicken to crockpot. Quickly sauté celery, onion and mushrooms in skillet until just slightly limp.

Add contents of skillet to crockpot with soy sauce and salt; stir well. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.

Serve over hot rice and garnish with toasted almonds. Serves 4.

Crock Pot Oatmeal

Wake up to breakfast ready and waiting!

Crock Pot Oatmeal

2 cups milk
1/4 cup brown sugar
1 tablespoon melted butter
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup rolled oats (not instant)
1/2 cup chopped apple
1/2 cup raisins
1/2 cup chopped walnuts

Grease the inside of crockpot. Put ingredients into crockpot and mix well. Cover. Just before going to bed, turn on the crockpot low. It will be ready to eat in the morning.

Crock Pot Italian Beef

Great for Italian Beef Sandwiches!

Crock Pot Italian Beef

3 - 5 lbs. beef roast

1 pkg. Italian Dressing mix

1 c. beef broth

2 t. Italian seasonings

1 roasted red bell pepper, sliced thin

salt and pepper to taste

sliced pepperocini peppers (optional)

Mix together beef broth, dressing mix and Italian seasonings. Pour over beef roast in the crockpot. Season with salt and pepper. Add roated bell peppers. Add pepperoncini peppers if desired. Cook on Low heat for 8 hours. Serve on rolls with sliced provolone cheese and lettuce and tomato if desired.

Sweet and Sour Chicken

A traditional favorite fashioned for the crock pot.

Sweet and Sour Chicken

1 lb. bag baby carrots
1 bell pepper, seeded and sliced thin
1 onion, sliced thin
1 lb. boneless, skinless chicken breasts
20 oz. can pineapple tidbits
1/3 c. brown sugar
1 Tbsp. soy sauce
2 tsp. chicken bullion granules
1 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. garlic powder
3 Tbsp. corn starch
1/4 c. water
3 c. cooked rice

Add carrots, bell pepper and onions to crock pot. Top with chicken. Drain pineapple and reserve juice. Place pineapple over chicken. Mix [pineapple juice with brown sugar, soy sauce, ginger, garlic, water and corn starch. Pour over chicken. Cook on low 6 - 7 hours. Serve over rice.

Seven Layer Bars

A classic recipe adapted for the crock pot.

Seven Layer Bars

2 tablespoons light, soft tub margarine, melted
1/2 cup graham cracker crumbs
1/4 cup chocolate chips
2 tablespoons butterscotch chips
1/4 cup flaked coconut
1/2 cup chopped pecans
1/2 cup fat-free sweetened condensed milk

Layer ingredients in a bread or cake pan that fits in your slow cooker, in the order listed. Do not stir. Cover and bake on high two to three hours, or until firm. Remove pan and uncover. Let stand five minutes. Unmold carefully on plate and cool. Makes 18 servings.

Crock Pot Lasagna

All the flavor of lasanga without the fuss.

Crock Pot Lasagna

1 lb. ground beef
1 onion, chopped
1/8 tsp. garlic powder
2-15 oz. cans tomato sauce
1-6 oz. can tomato paste
1-1/2 tsp. salt
1 tsp. dried oregano
1-12 oz. carton cottage cheese
1/2 cup grated Parmesan cheese
12 oz. lasagna noodles, uncooked
12 oz. shredded mozzarella cheese

Brown ground beef and onion in skillet. Add garlic powder, tomato sauce, tomato paste, salt and oregano. Cook long enough to get it warm. Spoon a layer of meat sauce onto the bottom of the crockpot. Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses. Repeat with sauce, noodles and cheeses until all are used up.

Cover and cook on low for 6-8 hours. 10 Servings

African Chicken Stew

If you like curry you will love this.

African Chicken Stew


1 lb. boneless skinless chicken, cut into bite sized pieces
1/2 tsp. ground ginger
1 tsp. paprika
1/2 tsp. nutmeg
1 tsp. coriander
1/2 tsp. cinnamon
1 tsp. allspice
2 Tb. oil
15 oz. can diced tomatoes
1 onion, chopped
2 cloves garlic, minced
3 c. chicken stock
1/4 c. natural peanut butter
2 yams, peeled and cut into chunks
2 Tb. red wine vinegar
2 Tbsp. dried parsley

Fry vegetables and spices in the oil until vegetables are tender and spices are fragrant (about 3 minutes). Add chicken, cook until golden brown. Add to crock pot. Add stock, tomatoes and Peanut Butter. Cook 4-5 hours on high or 6-7 hours on low.
