Crock Pot Chicken Curry

A nice mild flavorful curry, great served over rice with buttered cauliflower on the side.

Crock Pot Chicken Curry


1 1/2 lb. boneless, skinless chicken breasts, cut into chunks
1 onion, chopped
1/4 tsp. fresh ginger, minced
4 small potatoes, diced
1 c. frozen peas
2 Tbsp. butter
1 can coconut milk
1/2 c. pineapple juice
1 c. chicken broth
1 Tbsp. curry powder
2 Tbsp. flour
pinch red pepper flakes
1/2 tsp. pepper
1 1/2 tsp salt

Place chicken, onion, ginger, potatoes, peas, butter, coconut milk and pineapple juice into crock pot. In a small sauce pan, whisk flour and curry powder into broth. Heat to high, stirring frequently until thick. Whisk in salt, pepper and red pepper. Pour into crock pot. Cook on low for 5 - 6 hours.

Creamy Cheesy Crock Pot Potatos

Add chopped kielbasa and diced bell peppers to make this a full meal. Great served with green beans!

Creamy Cheesy Crock Pot Potatoes

1 (30 oz.) package frozen hash browns
1 can cheddar cheese soup
1 can cream of mushroom soup
1/2 stick butter, diced
1 small onion, minced
1/2 c. sour cream
season salt and pepper to taste

Combine all in crock pot and cook on low for 5-6 hours.

Crockpot Cherry Cobbler

Easy and so delicious!

Crock Pot Cherry Cobbler

(this recipe works for a 2.5 - 3 quart crock pot, double it for a larger crockpot)

1 box yellow cake mix
1 stick butter, melted
1 can cherry pie filling (you can also use apple, blueberry, peach or other canned fruit pie filling)

Stir melted butter into cake mix (it should be crumbly). Pour pie filling into crock pot. Top with cake mix and butter mixture. Cover and cook 2 hours on high or 4 hours on low.

Crock Pot Rice Pilaf

Crock Pot Rice Pilaf

A great dish alone or with chicken or fish.

1 package (about 1 1/2 cups) long grain and wild rice mix (uncooked)
3 cups chicken stock or broth
2 carrots, diced
2 stalks celery, diced
1 small onion, minced
1/2 c. sliced almonds
1/2 stick butter
1 1/2 tsp. salt
1/2 tsp pepper
1 Tbsp. parsley

Combine all in crock pot and mix well. Cook on high for 2 hours or until rice is tender. Ideal crock pot size for this recipe is a 2 1/2 - 3 qt. crock pot.

Crock Pot Pepper Steak

This is great served over rice or noodles.

Crock Pot Pepper Steak

1 lb. stew beef or beef strips for stir fry
1 28 oz. can diced tomatoes
1 bell pepper, sliced into strips
2 cloves garlic, sliced
5 scallions, sliced
3 stalks celery, sliced
1/2 tsp. ginger
1/4 tsp. pepper
3 Tbsp. soy sauce
1 Tbsp. Worshteshire sauce

Add vegetables to crock pot. Top with beef and remaining ingredients. Cook on low 8 hours or on high 4 hours.

Slow Cooked Pot Roast

Pure comfort food. Great served with rice.
Slow Cooked Pot Roast

1 (2.5 - 3 lb) beef roast
1 onion, thinly sliced
3 carrots, cut in chunks
2 potatoes, peeled and cut in chunks
2 stalks celery. cut in chunks
1/2 c. water
1 Tbsp. Worcestershire sauce
1 tsp. all-purpose seasoning (such as Mrs. Dash or Trader Joe's 21 Seasoning Salute)

Add vegetables to crock pot. Place roast on top. Add Worcestershire sauce and seasoning. Add water. Cover and cook on low for 10 - 12 hours.

Posole

A traditional Mexican soup, often served during the holidays. This one is great on any cold day when you want a satisfying and simple meal.

Posole

2 qt. water
1 lb. stew meat (beef or pork cut into small cubes)
3 cloves garlic, sliced
1 white onion, sliced
2 lb. can hominy, drained
1 c. dried pinto beans, sorted and rinsed
1 Tbsp. New Mexico chili powder
1 Tbsp salt (or more to taste)

Add all ingredients to crock pot and cook on low for 8 - 10 hours.

Crock Pot Potato Soup

A prefect recipe for cold weather. Pure comfort food.

Crock Pot Potato Soup

8 potatos, peeled and diced
2 carrots, diced
2 leeks or 4 scallions, sliced
1 stalk celery, diced
2 onions, diced
1 c. diced ham or crumbled cooked bacon
5 c. water
4 tsp. chicken boullion
1 Tbsp., dried parsley
1 Tbsp. chives
1 tsp. salt
1/2 tsp. dill
1/2 tsp. pepper
1/4 c. butter or margarine
1 (13 oz.) can evaporated milk
1/2 c. shreded sharp cheddar cheese
1/2 c. sour cream

Add all ingredients except milk, cheese and sour cream to crock pot. Cook 6-8 hours on high or 10 - 12 hours on low. During the last hour add the milk, cheese and sour cream, stir well then cover again and allow to cook until cooking time is done.
